First, we’re pounding and seasoning the chicken. Season generously with salt, pepper, and parsley. Don’t be shy!

Then comes the sear. Hot pan, a little olive oil, and patience. Let that chicken sit undisturbed for 4-5 minutes per side. You want a golden crust that’s borderline crispy. So. Good.
